CHEF'S KNIFE

Workhorse of the kitchen: great for dicing, mincing, chopping, and cutting a variety of meats and vegetables. We offer 8 – 12″ lengths.

DAGAS KNIFE

A long thin knife perfect for thinly slicing “Al Pastor” “Shawarma” and  “Gyro” meats. We can custom “shave” the Dagas knife to meet your needs.

CLEAVER

Largely used as a kitchen or butcher knife, mostly intended for splitting up large pieces of bones and slashing through thick pieces of meat.

CHINESE CLEAVER

Not as heavy as regular cleavers, they are mainly used for delicate dicing and slicing. Best for vegetable prep or for cutting up boneless cuts of meat.

OFFSET BREAD

This “L” -shaped knife works well on bread, smoked meats, vegetables and fruit. The offset handle allows a full cut before your hand hits the cutting surface, reducing wrist fatigue.

PARING KNIFE

Used for carving, cutting, coring, slicing and chopping fruits and vegetables.

SERRATED/
STRAIGHT BREAD

Primary use is for slicing bread, allowing a cut through a strong crust without crushing or tearing the sensitive inside. Great knife for sandwiches and bagels.

GRANTON SLICER

Slicers or carvers for roasts or prime ribs. The scalloped edges create air pockets between the blade and the food that is cut, allowing slices to fall away from the knife instead of sticking to it or causing tears in the meat.

BREAKING KNIFE

A top choice for most butchering work. Used to break down large quarters into smaller roasts and pieces. Its curved blade enhances the ease of a single pass cut in removing bones from flesh.

BONING KNIFE

Perfect knife for piercing meat easier and safer. Designed to cut through ligaments and connective tissue to remove raw meat from the bone. Excellent for trimming fat/ skin off meat and fish.
